Yes you can. But be aware that the apples may be a bit soft. I find that I prefer to use the peeler for dehydrating. For apples I like them chunkier.

It’s better if they are hot. The concern is any drastic temperature changes. So you should have hot apple butter going into hot jars, into hot (not boiling yet) water in the canner. Just keep your jars in the hot water in your canner. That is the easiest way to warm them up. I’ve got directions for apple butter here… . And more on using a water bath canner here… :). I do have to set the time sufficiently long during the warm-up phase or it will automatically switch off, but once the canner reaches pressure, it is so very convenient to set the time and temperature and let it do its thing — it will shut off automatically. I still listen for the sound of the regulator to make sure all is well, but I’ve yet to have any issues with it. I also was concerned that the weight of a full canner would be too much for the burner, but after processing with a double-decker full load of pint jars, I am confident that this is not an issue with my particular burner.

Also, the statement in the story that there are no electric pressure canners is incorrect. I was given a Presto electric pressure canner to test and review, and it’s wonderful! I have the smaller one that will not do a double layer of pints, but it does hold 7 quarts, so I use the electric pressure canner for quarts and a single layer of pints and the conventional pressure canner for when I need to process a double layer of pints. If my electric canner was bigger, I doubt I’d use the stovetop canner at all — it’s that convenient. For me, it would have been well worth the expense had I actually had to purchase it.

I already have the clearjel, just got the apples in. We will see how this goes!
I may cut back the sugar slightly, but otherwise I will stick to the recipe rigidly. I didn’t know I needed apple juice, but I will definitely get some. I don’t want a sad apple pie filling! (or worse, an unsafe one)
I have lots of Cortland apples as those were in season around here.
I hope this will make enough for multiple pies during winter and spring. 🙂 (about 5-6 quarts, we’ll see) I don’t love a well filled pie, so a quart will suit me just fine for a 9″ pie.
I love your recipes, it has been a great resource for me as I learn to can. I am learning from the internet, as my immediate family haven’t canned for years, or never did. TL:DR it is nice to have a website filled with science backed step by step recipes. 🙂
